Easy Slow-Cooker Chicken Fajitas Recipe

This Recipe is from Jamerrill Stewarts blog. I just love this mama, she's got a large crowd to feed and has some great recipes. As usual I modify most of them to fit our dietary needs but comes easy with a simple recipe like this. I love throwing the ingredients in the slow cooker in the morning of a busy day, a day we will be enjoying the outdoors as much as possible or just to give myself a day off of making dinner. Yes to me slow cooker and pressure cooking is like a day off, I mean can you really call it cooking if it's that easy??This recipe makes a lot but you can cut it in half. It's also great for left overs and even freezes well! Enjoy!!

Serves: 4

Prep time: 20 minutes

Cooking Time: 4 hours

Ingredients:

  • Boneless skinless chicken breast (2lbs-6lbs depending on crowd or if you want freezer meals)

  • Colored peppers (orange, red, yellow, green)

  • 1 Onion (I have used yellow but green or red would work just as well)

  • salt

  • Pepper

  • Parsley

  • Chili powder or taco seasoning (whatever brand you prefer, I love Trader Joe's Chili Lime)

  • Tomato paste

Instructions:

  1. Cut your colored peppers and onions.

  2. Add 1-6 oz. of tomato paste to the bottom of your slow cooker.

  3. Lay boneless skinless chicken breast in your slow cooker.

  4. Add in garlic powder or cloves, salt, pepper, parsley, and taco seasoning to taste.

  5. Pile all your cut vegetables on top of the chicken.

  6. Put the lid on your slow cooker while it does the work for you!

  7. Serve with tortillas and fresh veggies or salad – enjoy!

NOTES! Don't be freaked out by adding your seasonings "to taste", just go by how spicy you like it and how much chicken you have included.
