Guilt-Free Ice Cream Recipe

Banana Peanut Butter Ice Cream

I know there are going to be some jokes after I say this but here goes...This is Vegan, Gluten Free, Dairy Free, Soy Free and it is delicious!

First of all I have 2 kids and of course 1 likes chocolate (like me) and the other likes vanilla, throw in a husband that will eat anything I give him and I still obviously need to make 2 flavors. No worries it couldn't be easier trust me!

You'll need some spotted bananas, you know the ones you look at and think 'oh we need to eat those soon' and they haunt you? We always have bananas in the pantry or in the freezer. They can be added to smoothies or added to a snack or thrown into a yummy banana bread. But our favorite use for them of course is ice cream!

With no milk, cream, eggs, or sugar added this recipe does not disappoint! It does need to be eaten fresh from what I have found which honestly has NEVER been a problem for us. I make enough for the four of us and it's gone. Just right. A powerful food processor or blender is a must for this! If you want a chunkier ice cream be very careful to not over process as it will be more soft serve if you do. On that note this isn't a "hard" ice cream, it's definitely on the softer side but firm enough to serve in a cone.

Ok I'll get down to it. I am one to "eye ball" measurements but you can easily adjust to make this thicker or creamier by adding more extract or more PB or if you want one flavor to be more powerful than the others just add more of that ingredient. Be sure to read all the way through the recipe ahead of time so you are prepared and know how to make the 2 flavors.


Serves: 4

Prep Time: 5 minutes

Ingredients:

  • 4-5 organic bananas (organic makes the difference in taste!)

  • 3-4 tbs salt free smooth peanut butter

  • 1 tsp vanilla extract (optional)

  • cones and toppings (optional)

  • 1-2 tbsp coco powder (if wanting chocolate)

Instructions:

  1. First peel and slice the bananas about 1/4 of an inch thick (thinner if you’re blender or food processor isn’t very powerful)

  2. Place the slices in a large zip lock bag, and let freeze (I usually do this over night but however long you need until they are frozen through)

  3. Take bananas out of freezer and let sit for 5 mins in the bag on the counter -no longer.

  4. Run the bananas alone in the food processor until you see them all break up and look like the size of pebbles or close to it.

  5. If making vanilla add the extract and blend for 10 seconds. Even if I was making just chocolate I’d still add it but that’s just me.

  6. Add the peanut butter and process / blend until it’s at a thick consistency careful not to over blend or you’ll have soft serve.

  7. Serve or take out the serving for the vanilla now.

  8. If also making chocolate, add 1-2 tbs of chocolate (depending on just how much you love chocolate)

  9. Only blend until that is incorporated and again be sure to not over do it. I like to pulse it at this stage if using a food processor.  Enjoy!
