No-Bake Chocolate Peanut Butter Bars Recipe

The title says it all really. These are amazing! You can whip them up pretty quickly they just need to set for bit. You'll notice I like to post recipes that freeze well because it just makes life easier. While these do freeze well they have never made it to my freezer! They barely make it a day in my house! I know you'll enjoy these .

Serves: 8-10 bars

Prep Time: 10 minutes

Ingredients:

  • 1 cup peanut butter

  • 1/2 cup honey

  • 1/2 cup coconut oil

  • 2 3/4 cups rolled oats

  • 1/2 cup mini chocolate chips

Instructions:

  1. Line a 9 inch square baking dish with parchment paper. Set aside.

  2. In a medium pot set over low heat, combine the peanut butter, honey, and coconut oil. Stir until smooth and completely melted. Remove from heat and stir in oats. Pour mixture into baking dish, spreading an even layer and pressing down firmly with the back of a spatula. Refrigerate for 10 minutes or until cool.

  3. Remove from fridge and sprinkle mini chocolate chips over the top of the mixture, pressing down lightly with a back of a spoon to set in. Return to refrigerator and chill 2 hours or until firm. Slice into small bars and remove from pan.

  4. Store bars in airtight container in the refrigerator with a wax paper separating the layers.

NOTES! For the healthiest version of these use organic raw honey and fresh homemade peanut butter. We love Enjoy Life brand of chocolate for our non dairy alternative.
