Quinoa with Black Beans and Sweet Potato Recipe
There are a few recipes that I double the recipe on and make at least few times a month as they are my favorites and easy to grab, eat hot or cold and are very healthy and filling. This is one of them. It's a complete protein, and a very well balanced meal. I love throwing on a homemade dressing and throw it on a salad or eat along or even in a toasted corn tortilla. I haven't frozen this meal yet but there is no reason why it wouldn't freeze well.I have made this dish using different varieties of quinoa but I must say I personally prefer the white quinoa in this over any other. I also have tried different onions, again this is something you can easily adjust to your own personal taste. Top with some yummy avocado and oh my it's good! Hope you enjoy it as much as I do!

Cooking Time: 20 minutes
Ingredients:
1 cup red or white quinoa
1 Tb olive oil
1 medium sweet potato, peeled and chopped into 1/2 in cubes
1 small yellow onion
1/4 tsp dried red pepper flakes
2 cups water
1 can black beans
juice of 1 lime (optional)
Instructions:
Rinse quinoa in a small sieve.
Heat oil over medium – high heat in medium skillet with tight-fitting lid.
Add onion and pepper flakes and saute until fragrant, about 2 minutes.
Add water, quinoa and sweet potato. You may use broth instead of water. Bring to a boil.
Reduce heat to medium – low, cover and simmer until quinoa and sweet potato are tender about 20 minutes or until most of the liquid has been absorbed.
Stir in the beans and lime juice if using, top off with some diced avocado and serve warm or chilled.
